Wine pairings for your Thanksgiving meal

If a run to the local wine shop is on your “to do” list before Thanksgiving on Thursday these wine pairings may make the trip a little less stressful.

Sommelier Killian Buschetz of Chandler’s Cuisine & Wine Bistro suggests several wines depending on what your meal is.

Turkey- He suggests a Beaujolais (Gamay grape) from France for red. The easy to drink and fruit forward wine is good with the white meat and cranberry sauce. For white wine he suggests a Gruner Veltliner from Austria for its acidity and crisp flavor.

Ham- Whether you’re serving ham it on Thanksgiving or waiting until Christmas he recommends a Cabernet Franc for its robust tasting profile. Riesling from the Alsace region of France or Mosel region of Germany offers the acidity with a hint of sweetness for pairing with food.

Beef- The red meat desires a bold red wine from Bordeaux is his first choice. Specifically from Saint-Emilion known for its Merlot, Cabernet Sauvignon and Cabernet Franc blends. If need be a Napa Valley red can do the trick but watch out for high alcohol and big fruit wines.

Lobster- A Chardonnay with a hint of oak & butter is the way to go for this delicate seafood. A Pouilly- Fuisse from Burgundy makes for a nice wine pairing.

Salmon- A red Burgundy from Beaune known for its light body and fruit is always good. If you prefer a California or Oregon Pinot ask for a more earthy wine over a bold and jammie wine.

Pecan or Pumpkin pie- A sweet and nutty Pedro Ximinez sherry from Spain hits the spot for the end of the meal.

Wine pairings with a different perspective

Wine is very subjective therefore choices for wine pairing may differ from person to person. LDV Winery winemaker and co-owner Kurt Dunham offers his suggestions for dinner pairings.

He suggests American wines for this American holiday or even an Arizona wine. His go-to red wine is Grenache or an Oregon Pinot Noir. Chardonnay & sparkling wines from California or a Pinot Noir, Riesling or Gewurztraminer from Washington or Oregon are safe bets for your turkey. Check out his video he prepared for the occasion.

Verde Valley becomes the third AVA in Arizona

Last Friday the U.S. Alcohol and Tobacco Tax and Trade Bureau (TTB) named the Verde Valley an American Viticultural Area (AVA). It’s been 4 years since the region petitioned for the esteemed designation as a federally recognized grape growing region. The unique climate, soils, topography and geography are what makes the area unique and warranting the designation.

The Verde Valley becomes Arizona’s third AVA joining Sonoita and Willcox and wineries can use the new designation on the label when using grapes from the AVA. “I am ecstatic with this TTB announcement,” said Tom Schumacher, president of the Verde Valley Wine Consortium. “The Verde Valley AVA petition was submitted to the TTB by the Verde Valley Wine Consortium in 2017. This shows that our arduous efforts to submit the petition have been fruitful.”

Located in the geographic center of Arizona the new AVA is 219 square miles in northeastern Yavapai County centered near Oak Creek and the Verde River. 36% of the AVA or 79 square miles is privately owned land and includes 19 vineyards covering more than 136 acres planted to grape vines. The region also is home to 25 wine tasting rooms. Over 40 grapes varieties are grown in the area that can be made into wine including white grapes Malvasia Bianca, Chardonnay and Viognier. Syrah, Petit Sirah and Cabernet Sauvignon are just a few of the red grapes grown in the AVA.

Yavapai College is also in the AVA and offers offers classes, certificates and an associate degree in viticulture and enology. Maynard J Keenan expands kitchen & hires chef at Scottsdale tasting bar

With the success and popularity of his Merkin Vineyards Osteria and Merkin Pizza Wagon in Cottonwood, owner & winemaker Maynard J Keenan gave the go head to expand his Merkin Vineyards Old Town Scottsdale tasting room. Keenan also hired Executive Chef Steve Zimmerman to take the helm of the new Morello Forni Cupola Dome wood-fired oven, imported from Italy and revamp the menu.

“Our dishes feature ingredients grown in our Northern Arizona greenhouses, gardens, and orchards, and we supplement with produce sourced from local Arizona growers,” said Maynard J Keenan. “Merkin Vineyards farm-to-table, vine-to-glass concept is the cornerstone of our success, and it’s a concept we intend to continue developing.”

The award-winning Zimmerman comes to Merkin Vineyards Old Town Scottsdale after a career in hotel restaurant management in his home state of Missouri and most recently at Tres Kitchen & Bar ion Tempe. “He’s the perfect culinary artist for our vision,” states Keenan.
