Paul Martin’s American Grill rolls out lighter summer menu dishes & cocktails

Lighter eating is on the menu for the summer at Paul Martin’s American Grill in Scottsdale. The addition of lighter, healthier & locally sourced vegetable dishes include Starters such as Vegetable Summer Roll for $11 is combination of crunchy vegetables, mint and avocado with sweet chili sauce and for the summer soup fan, Chicken Tortilla Soup($9) comes with an avocado- poblano salsa, crispy tortillas and cilantro.

New entrees are on both the lunch and dinner menu and include The Warm Quinoa Bowl ($12 L/ $14 D) comes topped with Savoy spinach, tomato relish, mushrooms and summer vegetables & the Mesquite Grilled Chile Rellino ($15 L / $17 D) is stuffed with vegetables and cheese then drizzled with a roasted red pepper cream sauce.

On the dinner menu is the Grilled Mahi ($28) with baby bok choy, tomato relish and lemon. Seasonal vegetables are also available on the side for $6 and include Grilled Baby Bok Choy with lemon and olive oil, Sugar Snap Peas with Shitake mushrooms, ginger and garlic and Elote Corn on the Cob topped with chili aoili and Cotija cheese.

A couple of refreshing cocktails have also been added including The Corralejo Strawberry Splash comes shaken with strawberry infused blanco tequila, Cointreau liqueur, muddled strawberries, house made cane syrup and fresh lemon juice. The Cucumber Refresher is a blend of Effen Cucumber vodka, St. Germain Elderflower liqueur, muddled cucumber, basil, fresh squeezed lemon juice and soda water. Both cocktails are $13.
