Yulissa Acosta named Chef de Cuisine at Hearth ’61

Rising through the ranks can be the most satisfying and rewarding ways to earn a promotion. That’s how Yulissa Acosta earned her new title as Chef de Cuisine at Mountain Shadows Resort’s signature restaurant Hearth ’61. Acosta was part of the opening team at restaurant as a cook when it opened in 2017. Always looking to improve her culinary skills and with her culinary knowledge she was promoted to Sous Chef in 2018.

“We are delighted to have Chef Yulissa Acosta take the reins of our beloved Hearth ‘61 restaurant in her new role,” said Vice President & General Manager Andrew Chippindall. “With her unique culinary flare and working alongside Executive Chef Charles Wiley and Executive Sous Chef Alfred Muro, Chef Acosta will be the perfect person to continue elevating our cuisine by highlighting the best local ingredients.”

The Nogales Mexico born and Phoenix raised Acosta realized her passion for cooking in high school and was awarded a scholarship to Scottsdale’s Classic Cooking Academy upon graduation. From there she worked at Bink’s Midtown and Mirabel Golf Club before joining Hearth ’61.

Part of her new role is menu development and she will use her roots and love of Mexican-American & Southwestern cuisines and incorporate classic French cooking skills to the menu. She recently debuted Duroc Farm’s Pork Chop with Jacob bean ragu and black pepper glaze as well as the Two Wash Ranch Chicken Roulade with barley risotto, romanesco, and natural jus to the menu. She will also continue to follow the culinary standards set by Chefs Wiley and Muro.

Pretzel Fest every Wednesday at Pedal Haus Brewery

The local brew pub with locations in downtown Phoenix, downtown Chandler and downtown Tempe couldn’t wait til Oktoberfest to feature their new Bavarian Board. Each board includes charcuterie meats, olives, a large Bavarian pretzel, beer cheese, maple butter, haus mustard and 2 beers for $16. Upgrade the beers to a Stein for $20 or a bottle of Haus wine for $25.

Hearth ’61 now offers a vegan tasting menu

Chef de Cuisine Alfred Muro has created a 4-course vegetable focused menu at the Mountain Shadows Resort’s signature restaurant. The menu consists of Celeriac Salad, Parsnip Confit with curry chickpea stew, a Roasted Portobello Mushroom with eggplant cous cous and a Strawberry Lemon Tart with ginger meringue. The menu is available all year long and is $89 plus tax & gratuity.

Society by EVO opening in Tempe

A new restaurant from Nick Neuman and his partners is coming to Tempe in February. The late night upscale dining experience restaurant is looking to hire 50 people and is having a hiring fair today, Friday January 28th from 12 noon til 4 p.m. at EVO on Goldwater Blvd. in Scottsdale. Interested applicants can also send Nick a resume to nickneuman@evoscottsdale.com. The restaurant will be in The Cornerstone at Rural and University and will be open from 4 p.m. – 2 a.m.

The Mexicano now serving lunch

The new restaurant from Joey Maggiore is now serving lunch 7 days a week starting at 11 a.m. The made from scratch Mexican cuisine restaurant in northeast Phoenix offers a build your own Michelada bar along with agave based cocktails to go along with your Guacamole and Salsa Ferris Wheel, tacos made with blue corn tortillas, lava rock fajitas and a three foot long quesadilla. On weekends rotating DJs play Latin music to enhance the vibrant atmosphere.

The Crepe Club celebrates National Crepe Day

Next Wednesday February 2nd get a free Nutella or Parisian (butter & sugar) crepe at the Scottsdale Fashion Square (in the food court) location from 9 – 11 a.m.

Christiaan Rollich & chef Samantha Sanz join Sanctuary on Camelback

Paradise Valley’s Sanctuary on Camelback Mountain Resort & Spa added two reputable personnel to their food & beverage team Executive Chef Beau MacMillan announced. Chef de Cuisine Samantha Sanz returns to where her culinary career started as one of the first female chefs. Mixoligist and author Christiaan Rollich comes to the luxury resort from the Los Angeles restaurant and cocktail scene.

“Sam and Christiaan represent the next generation of tastemakers and the perfect team to move our culinary program forward,” said MacMillan. “Both have built impressive careers through sheer grit and passion. Both are at the top of their game. And they share a deep respect for each other’s craft that will drive their collaboration as they create a full-circle experience between kitchen and bar for our guests.”

Two-time James Beard award nominee Sanz was last the Sous Chef at Talavera Restaurant at the Four Seasons Scottsdale at Troon North. After graduating from Scottsdale’s Le Cordon Bleu School of Culinary Arts she worked at Elements where she impressed MacMillan with her talent, passion and culinary prowess. She then went to Virtu Honest Craft in Scottsdale before to the Four Seasons Scottsdale.

“I am thrilled to be back at Sanctuary—my culinary roots—and to give fresh expression to the vibrant flavors and colors here,” said Sanz. “The opportunity to work so closely with Beau and Christiaan to fully integrate the culinary and bar programs is particularly exciting to me and recognizes the power of food and drink to connect us all.”

Arizona welcomes Christiaan Rollich

Netherlands native Christiaan Rollich started working in the bar industry at Les Deux Cafe to earn extra money while pursuing a acting and modeling career. He authored BAR CHEF: Handcrafted Cocktails in 2019 and Forbes called him “one of LA’s most innovative mixoligists” and is credited by LA Weekly with starting the city’s cocktail renaissance while at celebrated restaurants A.O.C and Luques.

“I love working closely with chefs, studying their techniques and bringing them to the world of drink,” said Röllich. “I can’t wait to see what Beau and Sam will bring to the table flavor-wise, and look forward to exploring and reinventing so my cocktails match their food.”
