The Hyatt Regency Scottsdale Resort & Spa is partnering with James Beard nominated and celebrity chef Richard Blais to open six new restaurants as part of the resorts multi-million dollar renovation and rebranding to a Grand Hyatt property. Blais is currently on FOX’s hit show “Next Level Chef” with Gordon Ramsay and is known as the first winner on Bravo’s “Top Chef All-Stars”. He is also a cook book author, restaurateur and owner of “Trail Blais”, a forward thinking consulting firm that helps restaurants with designing of restaurants, menu creativity and employee training.

“We are thrilled to announce a partnership with Celebrity Chef Richard Blais to debut elevated dining and bar experiences at our beautiful Sonoran Desert resort,” said Lance Marrin, General Manager of Hyatt Regency Scottsdale Resort & Spa. “The new and exciting concepts will provide a wide variety of global and local flavors that our guests and local residents will love. All of our restaurant and bar venues are expected to debut this fall as we finalize our extensive renovation project.”

The first restaurant will be a signature concept, the passion project is inspired by Italian American cooking and will include handmade pastas and fire grilled meats & seafood. With indoor seating the restaurant will be connected to the resort’s Desert Garden outdoor entertainment space and include a elegant wine bar and lounge serving premier Italian wines.

Next will be a fusion of Japanese sushi and Spanish tapas made with southwestern ingredients. Made to order specialties will be the focus of the sushi and tapas bar. He will also oversee a Southwestern style grill concept serving breakfast, lunch and dinner 7 days a week. It will highlight regionally sourced produce, meats and vegetables and will be connected to the resort’s renovated lobby bar. Once completed the extravagant lobby bar will be a classic and grand styled lounge.

Blais has also overseen the two re-imagined poolside dining concepts. H2Oasis is currently open serving island inspired tacos and frozen cocktails made with flavors from the South Pacific, Polynesia, Hawaii and The Caribbean. The second will be family friendly concept serving American cuisine such as gourmet burgers, seasoned fries, crispy chicken tenders and more.
