Chef Wade’s Mac-n-Cheese truck hits the streets of Phoenix

Your New Year’s resolution to eat healthy made have hit a speed bump as Chef Wade’s Mac-n-Cheese truck is now roaming the streets of Phoenix serving every bodies favorite side dish turned entrée.

When Chef Wade realized there was no food truck focusing on Mac-n-Cheese he converted his Bistro on Wheels to serve only cheesy noodle goodness. The decision was made easier as mac-n-cheese was his best-selling selling item for years.

“I wanted to take something simple that everybody loves and really turn up on the volume on flavor profiles and interesting ingredient combinations,” says Simpson of his new concept. “At the end of the day, it’s about making our customers happy and feeding them great tasting, good quality food.”

Chef Wade has created some unique options for his truck including Truffle Mushroom Mac-n-Cheese, the spicy Southwest Mac-n-Cheese with green chiles and smoked pork, Lobstah Mac-n-Cheese and Nawlin’s Mac-n-Cheese with Andouille sausage, shrimp and Cajun spices.

Chef Wade has All American options on the menu including a Tomato & Bacon Burger topped with you got it mac-n-cheese, a Grilled Ham & Mac-n-Cheese sandwich on Texas Toast.

If you’re trying to stick to your New Year’s resolution Chef Wade offers a healthy & vegan option, Mac-n- Trees with broccoli, cauliflower, Butternut Squash and Cashew puree.

Classic Mac-n-Cheese can be customized to every bodies taste with additional toppings that include pesto, hot dog, bacon and more. For the adventurous eater order the Special Mac-n-Cheese and don’t ask for any specific ingredients and Chef Wade will surprise you.

It’s game on for restaurants during Cactus & Fiesta Bowl games.

College bowl season has kicked off and the Phoenix area hosts both the Fiesta Bowl at University of Phoenix Stadium & Cactus Bowl at Chase Field. With thousand of fans coming to town for the bowl games , restaurants put on their game face to attract out-of-towers here for the games or just to enjoy our beautiful holiday season.

James Beard winner Alex Stratta joins The Herb Box

James Beard award winner and Michelin starred chef Alex Stratta brought smiles to the faces of foodies around the Phoenix area earlier this year when he announced he was returning to Phoenix after spending several years strutting his stuff in Las Vegas. The corporate job that brought him back didn’t work out the way he had planned and was short-lived. Fortunately it was culinary gold for The Herb Box who hired Stratta as Director of Culinary.

Stratta will oversee all 3 locations (Southbridge & DC Ranch in Scottsdale and The Colony in central Phoenix) menus as well as their grab and go market and catering operations. His first order of business was to roll out a new Fall dinner menu. The menus will continue to be unique and use seasonal & local ingredients with vegetables playing a major part. The dinner menu rolled out in late October and a Fall lunch menu is planned for an early November roll out.

The Herb Box owner Susan Wilcox wasn’t looking to hire for a new position but she knew of Stratta’s reputation and with the help of mutual friends the 2 were connected, Wilcox says “Alex and I had a meeting of the minds. Our passions and vision for the growth of the company perfectly aligned.”

Stratta will also focus on the kitchen’s business operations which is one of his strengths. This will include developing and training the back of the house, refine procedures, ensure menu consistency in all with all 3 locations and expand catering and the grab and go market which will maximize the long-term growth of the restaurants. While no new restaurants are planned, Wilcox is open to expansion if the right location and opportunity become available around the valley or outside of Arizona. The Wing Counter huddles up with Football Wing Specials and Kool Aid cocktails

Glendale’s The Wing Counter has been serving up 15 varieties of rubbed and sauced chicken wings since 2015 and have now introduced Kool Aid cocktails, beers and wing specials for the upcoming football season.

The Kool Aid cocktails known as TWC Punch are available in 3 flavors….Fruit Punch Vodka, Grape Vodka and Blue Raspberry Tequila all sell for $6. Beers now include Coors Light & Angry Orchard Cider for $2.75 and Blue Moon, Corona, Leinenkugel’s Summer Shandy and Lagunitas IPA are $3.75.

The Chicken Scoop opens in Scottsdale

The Chicken Scoop Gallery Dishes low res (24 of 122)I had the opportunity to meet & eat with the owners of The Chicken Scoop as they opened their first casual restaurant in Scottsdale and here is what I learned and what I liked.

Owner Dana McCurdy and friends opened The Chicken Scoop in mid-July bringing their Alabama roots & favorite comfort food, Chicken salad, to their 1st restaurant after months of planning and looking at 75 locations, deciding that The Scottsdale Promenade was the right place.

Whether you like the spicy flavors The Southwest or Spicy Thai, the savory taste of Curry or Pesto or prefer a hint of the sweet in the Sweet Berry or Waldorf these are just a few of the 14 flavors served by the scoop or as Toasties, cheesy hot sandwiches, that seem to be going over well since the opening. I enjoyed the Buffalo, Pesto, Southern, Sweet Berry and The Popper for their mild flavors and balance with the chicken.

According to McCurdy “We’ve taken one of the most All- American comfort foods and put our own spin on it, fourteen times over”. With another dozen or so flavors in waiting, plans are to rotate in seasonal flavors and other favorites.The Chicken Scoop Gallery Dishes low res (45 of 122)The flavors are from recipes that were made for family and friends for BBQs and picnics using shredded chicken. The Chicken Scoop uses all- natural, hormone free chicken that is never frozen. In addition to scoops & Toasties, House Green Salads and Chicken Scoop meals (1 Scoop $7.69, Double Scoop $8.69 & Triple Scoop $9.69) are available. All Scoop meals come with Banana Pudding Scoop.

Sides are available for $2.49 each and I like the Broccoli Slaw and Loaded Potato Salad with Black Eye Pea Salad, Mixed Fruit and Kettle chips also available. Chicken Enchilada soup and a gourmet soup of the day are also on the menu.

The modern farm house decor is inviting and minimal adds to nice dining experience.
